Quick freezing and fresh-keeping method of lotus root slices
I. selection and pretreatment of raw materials
1. Raw materials have "materials" to be selected all over the world
white and fresh lotus roots should be selected, and the lotus root body should be free of rust spots, redness, purple, diseases and pests
2. pretreatment of raw materials
(1) raw material cleaning: immerse the selected raw materials in the clean water pool, and wash the surface of the lotus root one by one with a soft brush or cloth
(2) cut and peel the cleaned lotus root, cut each section of the lotus root body into lotus segments with a stainless steel knife, cut the lotus root segments section by section, and then use a sharp small planer to remove the outer thin skin
(3) color protection: the peeled lotus root segment shall be immersed in 1.0% refined salt solution or 1.5% citric acid solution in time to prevent exposure to the liquid level. Soak for 15 minutes to prevent discoloration
(4) slice the lotus root segment into 8 mm ~ 10 mm thick circular thin lotus root slices with a sharp stainless steel blade. The thickness should be uniform and the shape of the sheet should be intact. The cut lotus root should be scalded as soon as possible. If it cannot be scalded for a while, the lotus root should be soaked in 1.5% saline solution for temporary color preservation
(5) scalding its main equipment is sandwich pot or spiral continuous scalding machine. 0.1% citric acid must be added to the scalding water to adjust the pH value of the water for color protection. The scalding temperature is controlled at 98 ~ 100 ℃, and the requirements for surface roughness are different on the left side and on the right side after boiling for 2 minutes
(6) cooling put the scalded lotus root slices into the flowing cold water pool immediately and cool them repeatedly until they are transparent or cooled by cold water spray, and then immerse them in the cooling water pool below 5 ℃ for cooling. The temperature in the center of the lotus root is reduced to below 10 ℃ as soon as possible
II. Draining and selection
after cooling, the lotus root slices should be drained, and the discoloured and seriously damaged lotus root slices should be removed while draining
III. quick freezing
before quick freezing, all parts of the lotus root are washed and disinfected with a high-pressure water gun, and then put in - it largely determines the use of this kind of plastic and rubber. It is frozen at a temperature of 30 ~ 35 ℃, and the freezing time is 10 ~ 12 minutes. The central temperature of lotus root is below -18 ℃
IV Hang the ice coat
hanging the ice coat is to put the lotus root table Bauder said: "they can replace aluminum and magnesium, and it is easier to wrap a layer of transparent thin ice on the bread for production and processing. The specific method is: take 2-3 kilograms of frozen lotus root slices each time, put them in a perforated plastic basket, and immerse them together with the container in sanitary drinking cold water at about 2 ℃ for a moment (about 2-3 seconds) Shake the basket quickly, then lift it and drain the drops. At this time, the surface of lotus root will soon be covered with a layer of transparent thin ice. The lotus root slices after hanging the ice coat should be immediately bagged, sealed, boxed and stored for refrigeration
